WHO?
The Kopjar vinery shot up to the creme de la creme of Croatian wine scene. Vineyards, which were planted in 2005, are cultivated in line with eco-agriculture. The owner, Mr. Robert Kopjar, actively joined this project in 2012. The human touch is crucial in producing process, and the final result is the best quality grapes which procreate the finest terroir wines as a result.
WHERE?
Vineyards are located in the south and south-east exposition at 250-260 meters above the sea level. The vineyards and the winery are at the least end of Varaždinska county bordering with Krapinsko-Zagorska county, in a small village of Pece. Vineyards are mostly planted with white varieties. A green harvest is commonly used and wines are left on lees in inox or big oak barrels.
WHY?
Sauvignon Blanc may not be ubikvist like Chardonnay, but its cosmopolitan spirit made it a worldwide famous variety. There are different types of vinification Sauvignon Blanc, and Kopjar leans to Styrian region Sauvignons. This means it is more mature, more serious and with full body. It unlocks aromas of elderflower, nettle and fresh grass combined with gooseberry and passion fruit.
